This morning, Liam had a half of a ham and cheese sandwich. He didn't reject it when I feed him, probably because he's hungry in the morning. He took a small bite and grandma feed him the rest.
Liam has been able to respond with "ya" very quickly now. Sometimes it take some prompting, but, when he does it himself, we praise him.
His diet currently consist of protein, carb and veggies. Proteins are usually chicken, tofu, beef, or wild salmon. I try to buy the organic or grass-fed animal proteins. I just want to provide the best food possible and also, grass-fed is better for the environment. He's been a white rice boy every since he's able to eat solids. However, I've been mixing brown rice and multi grain rice when I cook the white rice. He's eating it just fine. Veggies are usually broccoli. I have been able to get a few crowns from my garden, but the hot weather isn't very good for these cold weather vegetables. And today, he was introduced to zucchini. He. ate it just fine also.
One of his favorite foods is pizza. The trick to making tasty pizza at home is to flavor the crust with herbs like, parsley, oregano, thyme, basil, etc. I usually just put in Italian seasoning. Garlic powder is a great addition too. Before putting on the cheese, I would layer small bits of cooked chicken, and veggies, just in case he doesn't like seeing toppings on his pizza. Oh, sprinkling some crushed nutritional yeast will make it healthier. Tonight, the pizza was on point and he had two slices. I'm not sure if he can feel when to stop eating since he would just keep going if we keep putting food in his mouth. We don't calorie count. But we do make sure we're not over feeding him.
We made red velvet cupcakes today because it seems appropriate for the upcoming Valentine's day. I gave him a bite of the whipped topping and told him it was ice cream. He ate it and said ice cream very clearly. I was so happy.
I'm going to end on that happy note.
